fix: use memory mempool backend to avoid PostgreSQL dependency
- Remove psycopg2 from dependencies (compilation requires pg_config.h) - Set default MEMPOOL_BACKEND=memory to avoid PostgreSQL - Fix build error: fatal error: pg_config.h: No such file or directory
