aitbc db22fc9871 Pin Python version to 3.13.5 and ignore coordinator-api poetry.lock ...

- Update requires-python in all pyproject.toml files from '>=3.13' to '>=3.13.5,<3.14'
  - aitbc-core, aitbc-sdk, aitbc-crypto, aitbc-agent-sdk
- Add apps/coordinator-api/poetry.lock to .gitignore
- Project officially supports Python 3.13.5 only
